few curry leaves
2 medium capsicum
1/4 tspn turmeric powder
1/2 tspn red chilli powder
1/4 tspn kashmiri chilli powder
1/2 tspn coriander powder
1/4 tspn garam masala
3 medium Boiled potato
salt
few coriander leaves

    A simple stress less meal for a busy tiring day

    Hey everyone,

    Today, Lets see how we can make a very easy dish that can be prepared in no time. You only need some boiled potatoes and fresh capsicums. Moreover this is a very healthy dish that has Vitamin A, B6, E, C and rich in folates.

    We need some very basic Indian spices and a wide non stick frying pan which is the important part in preparing this dish. potatoes being boiled will develop a crisp coating on top and capsicums will develop a crunchy texture if sauted in a wide pan. narrow pot or kadhai can make this dish go mushy. Else you wont find the dish that i have explained it over here… hahaha….!

    COOKING PROCEDURE

    In a wide pan, heat oil and add jeera. no need to add mustard it will give you slight smokey flavour to this dish which we don’t want. add curry leaves and fresh ginger garlic green chilly paste. cut the boiled potato and capsicum in medium cube sizes. add finely chopped onion followed with the capsicum. let the capsicum cook on medium high flame till it develops a white like coating on its surface. time to put the potatoes and give a good toss.

    season with the spices like turmeric powder, red chilli powder, kashmiri chilli powder, coriander powder. also a bit of garam masala. Now is the time to add some tomato with its skin removed. adding that way helps it maintain the moisture throughout. add tomato towards the end of the dish and not immediately after you put onions. sprinkle salt as per your taste. garnish with finely chopped coriander leaves.

    This dish goes well with phulka roti. Phulka roti is an Indian tortilla made freshly with wheat dough. it is tossed in open flame or sometimes tawa without adding any oil to it.
