    Italian pizza parcel is nothing but a very simple , quick, grab on go meal. It can be has as breakfast, lunch, snack or dinner. It is very appetizing and fully loaded with flavours wanting you to eat more. The sauce is the best part.

    This is very simple to make, the main ingredients are flour and homemade fresh pizza base sauce.

    METHOD:

    To make the dough,

    In a mixing bowl, combine the flour and salt, mix well, and set aside. In a separate bowl of warm water, combine active instant yeast and sugar to activate it. Pour this to dry mixture. 1 tbsp milk ensures the dough is soft and moist. Stretch, pull, and fold the dough for about 25 minutes. Cover with cling foil and place in a warm place to rise. It should take 30 mins for initial rise.

    To make the marinara sauce

    which is basically the pizza base sauce, prepare a fresh batch of homemade pizza sauce. Fresh tomatoes, blanched and peeled, are required. In a sauce pan, combine olive oil, sliced garlic, fresh basil leaves, and a hand blender to crush the tomato. Bring to a simmer. Keep the consistency between a lumpy piece and a runny puree. Season with salt, oregano, and basil leaves. and some tomato ketchup.

    To make the filling,

    in a frying pan, add some butter, olive oil, garlic clove, saute some onion (cut to little square size). add boiled corns along with fresh paneer cubes give a toss. add peri peri powder and salt. add some small size thin carrot julienne. set aside.

    To make the special sauce,

    Take white mayonnaise, tomato ketchup and pizza spice mix.  mix well set aside.

    To make the parcel ,

    In a baking tray, line the parchment paper. Take a handful of the dough and flatten it into a triangular shape, take the desired amount of marinara sauce and filling in a small seperate bowl , mix it well and place at the center of filling. then add a teaspoon of the special sauce. bringing each corner towards the center so it forms a triangular shape.  Add grated mozarella cheese or regular processed cheese slice in the center of filling. Allow it to rise for another 15 minutes.

    Baking Instructions:

    Preheat the oven to 180°F for 15-10 minutes and keep it ready until then. Allowing it to sit for an extended period of time may cause it to fail to rise in the oven.

    bake for 15 – 20 mins between 160 to 180 degree. we dont want it to be hard and crispy from top. It should just feel like eating a bread. so keep the layer also slightly thick. serve hot.
