Sometimes the best way to prepare any recipe is to keep it as simple as possible.
few such vegetables are okra, ridge gourd, colocasia, snake gourd, tapioca etc.
I make this ridge gourd gravy in a very simple style which not only takes 15 minutes for preparation but also tastes heavenly.

METHOD :-
- In a chatty heat oil, a little extra oil than usual.
- add mustard seeds to splutter. no need of jeera.
- add finely chopped onions and saute until golden brown.
- add finely chopped tomato and salt. saute until mushy.
- Now time for spices. at this stage keep ridge gourd cut and ready.
- All spice as mentioned goes in.
- adjust water and salt.
NOTE :-
- Do not let the spices cook for long time. once you had spices, give a quick stir, add ridge gourd followed with water.
- This process of cooking brings a lot of difference to this recipe.
